زهقتكم بالصور على الفيس بوك امبارح بس كان يوم جميل جدا قضيته بصحبة عدد من مميزي الاعلام بالاردن في درس للاكل التايلندي ...طبخنا سوا واكلنا سوا وضحكنا سوا...شكرا لفندق الفورسيزنز عمان على افخم استضافة بمطعم Asia ولياسمين الساطي ، مديرة العلاقات العامة بالفندق على صحبتها الحلوة ودعوتها اللطيفة لمجلة نكهات عائلية المميزة واللي خصتني باني امثلها بالدرس المميز...واكيد لكل الشيفات المميزين بالمطعم وخاصة ضيفتهم الشيف انشيلي واللي جاية من منتجع الفورسيزنز ب Chiang Mai بتايلند لتعطي هالدرس الرائع والمميز...

واذا بدي آخدكم معي شو سوينا امبارح بقولكم انه بس طلعنا على مطعم Asia كان الكل باستقبالنا بترحاب...وغير طاولة المقبلات والعصائر المختلفة والمميزة اللي كانت موجودة على السفرة..انا طبعا كنت فاقدة لحاسة الشم والذوق لاني مريضة بس لما شربت عصير الليمون بالنعنع وعشبة الليمون...في اشي صار بحلقى وانفي وصار في شوية احساس بالطعم...واو ...فكرة رائعة اضافة عشبة الليمون لليموناضة...
  



وبالترتيب...العصائر هي: الليموناضة ما غيرها اللي حكيتلكم عنها، مانجا وجرانادين، تفاح بالقرفة والرابع بكذب اذا بقولكم اني دقته لاني بطلت قادرة...هههه


وللي ما بيعرف عشبة الليمون او lemon grass فهي شكلها

وبعدين وبعد التعارف كان لكل واحد فينا فايل فيه المعلومات والوصفات وقلم ودفتر وطبعا مريول مطبخ...
واخدنا صور جماعية...


الاغلب صبايا بس الشباب ابدعوا برضه...
شيف انشيلي هي اللي بالنص...

واجت لحظة الحسم...وصار لازم ندخل على الطبخ كفرق مكونة من شخصين وكنت محظوظة جدا بمشاركة دانا الباشا...انسانة شفافة جدا وجميلة من برة وجوا وستايل على الآخر :) ومن دردشتنا سوا عرفت انه عندها مدونة Dana's Sanctuary  زوروها وتابعوها وهي بتحب تكتب عن اي شي باللايف ستايل :) انا صرت من المتابعين... وبآخر القعدة قلتلها انها بتذكرني بنايجلا لوسون...الشيف الانجليزية...



وبلشنا بالباد تاي Pad Thai وهي اكلة تايلاندية يامتياز وانا عملتها اكتر من مرة بس امبارح كان الها نكهة خاصة بوجود الشيف وتعليماتها وكمان باحد المكونات اللي جابتها معها من تايلند وهي سكر القصب ...
بس اول اشي كان لازم نعمل عش من البيض المخفوق عشان نحط النودلز فيه...لما شفنا الصورة كنا كتيييير متخوفين من مدى نجاحنا وانه الموضوع صعب كتير...بس طلع ولا اسهل...بيض مخفوق مع شوية مي وبينحط بكيس الحلواني (الكريما) وبينفتح شوي من القاع لينزل منه خيط من البيض بشكل سلس بس مش فتحة كبيرة...و حمينا المقلى غير اللاصق ورشيناه بسبراي وبسرعة بنعمل خطوط من البيض في كل المقلى وبنلف المقلى بزاوية 45 وبنكرر العملية لتتقاطع الخطوط وبنترك البيض لينشف شوي وبنقلبها على لوح وبتركها تبرد دقيقة وبنحط الشبكة في وعاء لتبطنه ونعبيه نودلز الباد تاي ونقلبه....فكرة رائعة للارز المقلي Fried Rice  واللي شاركتكم طريقته قبل بس اضغطوا على اسم الوصفة

زبطت معي (الى حد ما ) من اول محاولة ودانا كمان بس تبعتها انمزعت شوي لما قلبناها...فعملنا كمان واحدة وطلعت تمام...



اما وصفة الباد تاي اللذيذة فهي كالتالي:

باد تاي من شيف انشيلي (فور سيزنز)
المقادير:
لصوص الباد تاي:
1/4 كوب سكر قصب (ممكن استبدالة بسكر بني فاتح)
1/4 كوب صوص السمك
ملعقة طعام معجون تمر هندي
1/4 كوب صوص التشيلي (هي الصورة وموجود في اغلب السوبرماركتات)


للباد تاي (الكمية لشخصين)
ملاحظة: احنا عملناه بالجمبري والتوفو بس ممكن ينعمل بالدجاج بس...رح اعمله واخبركم النتائج واي تعديلات على الوصفة لتصير اسهل عليكم)
المقادير:
بيضة مخفوقة
4 حبات جمبري حجم وسط
1/2 بصلة حمراء صغيرة مقطعة شرائح
ملعقة طعام فجل مجفف مملح (هيك صورته وممكن الاستغناء عنه) رح اشوف وين ممكن الاقيه واخبركم :)

1/4 كوب توفو جامد مقطع ومقلي
1/2 1 كوب معكرونة الارز 
1/4 كوب +2 ملعقة طعام ماء
كوب Bean Sprouts ممكن طازج وممكن معلب
1/4 كوب الجزء الاخضر من البصل الاخضر مقطع لاطول حوالي 2 سم
القليل من السكر
2 ملعقة طعام فستق سوداني محمص مفروم
زيت 

الطريقة:
لتحضير الصوص:
يوضع معجون التمر هندي بكوب القايس ويضاف له الماء ليصبح 1/4 كوب ويحرك ليذوب
في مقلاة صغيرة نضع صوص السمك، السكر، خليط التمر هندي، وصوص التشيلي وتطبخ على حرارة منخفضة ليذوب السكر ثم ترفع الحرارة لتغلي وترفع. ممكن عملها قبل بوقت وبكميات وتخليها بالثلاجة.
للباد تاي:
يغسل الفجل المملح بالماء البارد عدة مرات للتخلص من الملح ثم تعصر من الماء وتقطع ويضاف له القليل من السكر
تنقع النودلز بماء دافئ 1/4 ساعة لتنضج وتصفى جيدا

في مقلاة واسعة وعلى نار متوسطة الى عالية يوضع ملعقة طعام زيت ويضاف البيض ويقلب بسرعة ليصبح قطع صغيرة ثم تضاف 2 ملعقة طعام زيت ويضاف الجمبري ويقلب لينضج ويصبح لونة زهري
يخلط البصل بنوعيه والفجل والتوفو ويضاف وتقلب دقيقة
تضاف النودلز وتقلب لتصبح طرية ثم نضيف 1/4 كوب من الصوص المعدة وترش بالفول السوداني وتقدم...

والطبق التاني كان معجنات الارز المبخرة Steamed Rice dumplings
كتييير زاكية وبدها شغل وبدها بوست خاص وبوعدكم قريب...اطبقها وتمشوا معي خطوة بخطوة



والحلو كان لآلئ التابيوكا بالذرة وحليب جوز الهند المحلى


رح برضه اعملها...وبخبركم... :)

If you are following me on FB or Instagram, you were probably bombarded by the photos I shared of a great day I spent yesterday along the side of media representatives in Jordan in a very special Thai cooking class hosted by the one and only Four Seasons Amman. I was representing Family Flavours Magazine, whom I owe a big thank you for choosing me to experience this lovely adventure. I also would like to thank all the chefs at "Asia" the great restaurant at the FSAmman and their guest Chef Anchalee Luadkham of Four Seasons Chiang Mai, Thailand for giving us the opportunity to experience part of the great Thai cuisine.

Please allow me to take you along with me to see how much fun I had...we were received with great smiles and generous welcome at Asia, FSAmman. The great view of the appetizers and drinks table in the front of the restaurant was breathtaking...and though I had lost my taste buds in my battle with the flu, it was the refreshing lemongrass mint lemonade that gave me back some of my taste sense.


 I was so grateful as I was afraid that I will be missing out on tasting all the goodies of the day. So what a great idea to add lemon grass to your lemonade. Here is a pic of it in case you are not familiar with it.

After greetings and hellos, we were given a file with the recipes, a notepad, a pen and an apron to use while cooking. Then we took a proud group photo with our aprons before the battle begins...hehehe...

Mostly gals but the guys did well too...Chef Anchalee is the one in the Middle.
And now for the moment of truth...we had to get crackin ...and start the cooking as teams...I was so lucky to be teamed up with Dana Al-Basha...a lovely soul...a beautiful young lady inside out...I felt I knew her since 
ages though we had just met...we just clicked...a Leo and a Cancerian....we both believe in signs..hehehe
Dana loves anything lifestyle...she looked that way as she was all dressed up and very stylish with her signature red lipstick...she has her own blog where she likes to share all her experiences about lifestyle where ever she goes...I became a follower as soon as I got back home...follow her at  Dana's Sanctuary. I told her she reminded me of the lovely Nigella Lawson...the famous English Chef...she laughed as I wasn't the first one to tell her that..


We started with the Pad Thai, a famous Thai dish which I made several times before but it had a special tasted yesterday in the presence of a Thai chef with her authentic touch in addition on a key ingredient which she brought with her from Thailand "palm sugar"
But first we had to do the garnish, an egg nest to put the pad Thai ..when we saw the picture on the recipe paper, we felt intimidated...this is not going to be easy and where quite skeptical..but after trial..things where not as difficult..scrambled eggs with some water in a pastry bag with a small opening...small enough to let a string of eggs come out...not too much. We needed to heat our pans on medium high heat, spray with a cooking spray and start drizzling the egg mixture into strings all over the pan, then turn it about 45 degrees and start again so the lines will cross. Let the eggs set and then flip on a board. Let it cool off a bit and then put it in a bowl carefully...Dana ended up tearing hers while putting it in the bowl..but hey she tried again and it was a great success. Now I am thinking that this is also another great way to serve fried rice...I have posted the recipe on this blog...just click here for the recipe. 



As for the Pad Thai recipe...here it is from Chef Anchalee Four Seasons
Ingredients:
For the Pad Thai Sauce:
1/4 cup palm sugar (you can subsitute with light brown sugar)
1/4 cup fish sauce
1 Tbsp Tamarind paste
1/4 cup chili sauce ( here is a photo of it and it is available in all big supermarkets in Amman)


For the Pad Thai (Two people)
Note: We made it using shrimps and Tofu, but it can be done with chicken as well..I will be making it soon and adjusting the flavours to suit our budgets and what we can find in Jordan and will update you soon so 
stay tuned)
Ingredients:
1 scrambled egg
3 medium sized shrimps
1/2 a small red onion or shallot, thinly sliced
1 Tbsp dried radish (this is its picture and I am not sure if it available in the market..I shall also check for you and update you but I presume it won't be the end of the world if you don't add it).


1/4 cup firm Tofu, cubed and deep fried
1/4 cup+2 table spoons of water
A handful of stick rice noodles
1 cup Bean sprouts (Fresh or canned)
1/4 cup the green part of green onion cut into 2 cm pieces
A bit of sugar
2 Tbsp toasted peanuts, chopped
Oil

Directions:
To make the sauce:
Put the Tamrind paste in a measuring cup and mix with enough water to make a 1/4 cup. In a small pan, put fish sauce, sugar, tamirand mixture, chili sauce and cool over low heat till sugar is dissolved and raise the heat to bring it to a boil. This can be made ahead of time and refrigerated.
For the Pad Thai:
Wash dried radish in water several times and squeeze water out. Mix with a bit of sugar and chop.
Soak noodles for 15 minutes in warm water and drain well.
In a wide wok and over high heat, put one Tbsp of oil and add the scrambled egg, cook quickly so it is cooked through and is in small pieces. Add shrimp and cook until pink while stirring all the way.  Mix all onions, radish and tofu, add to the work and cook quickly. Add noodles and cook till noodles are tender. Add 1/4 cup of the sauce and sprinkle with peanuts mixture...serve..mmmm delicious...

The other dish we made was the Steamed rice dumplings...very tasty but needs a lot of work..I do have the recipe and planning to share it with you but in another post as I am planning to demonstrate step by step along with the dough...so stay tuned.


Dessert also was something so light and different...Tapioca pearls with sweet corn and sweetened coconut milk...planning to try it and let you know how it comes out...


And as always, Four Seasons Amman is well known for great hospitality...we were given the chance to enter a draw to win a trip to Thailand to stay at FS resort there, full board...pray for me to win..the trip will be for two people...
Chef Anchalee was so sweet to get us great gifts from Thailand...
