بابا غنوج بدبس الرمان Baba Ghanoush with pomegranate molasses

بتعرفوا انه المثل ما ترك اشي وما قاله...في مثل بالانجليزي بيقول when it rains, it pours وهادا هو الحال بالزبط هالايام معي...يعني 2 مراهقين بالبيت وبيبي رح يصير سنتين...مجننيني...الله يخليهم وكمان البنت اللي بتساعدني سافرت امبارح الله يسهل عليها بس لسة ما في حد بديل للآن (الله ييسر) وكمان ماما مريضة وابو صاحبتي الغالي رولا توفى امبارح الله يرحمه ويحسن اليه...فقلت لحالي اذا ما بطبع البوست هلأ (انا عم بكتب بالليل من مساء يوم الاثنين بس مش رح تقرؤه الا اليوم الثلاثاء) مش رح ينكتب اشي على المدونة لانه الجدول لليوم والحمدلله طافح مش مليان...

المهم طبق المقبلات الثالث هم البابا غنوج وبيختلف عن المتبل بانه ما فيه طحينة وبينعمل بدبس الرمان...

بابا غنوج بدبس الرمان
المقادير:
باذنجانة مشوية اما بالفرن او على الغاز وانا بحب اللي على الغاز لانه الطعم مدخن
عصير ليمونة
حبة ثوم مهروس
بصلة صغيرة مفرومة ناعم
3 ملاعق طعام بقدونس مفروم ناعم
ملعقة طعام نعنع اخضر مفروم ناعم
حبة بندورة بدون بذور مفرومة ناعم
ملح
1/2 فليفلة خضراء مفرومة ناعم او حبة فلفل اخضر حراق للي بحب
2 ملعقة طعام دبس رمان
رمان حب للوجة وبقدونس مفروم

الطريقة:
تخلط كل المقادير على الخلاط وتسكب وتزين بالرمان والبقدونس وزيت الزيتون



Do you know when they say...when it rains it pours? Oh yeah you bet it does!!! This is currently the situation which I am facing with many things going on in my life which makes things quite crazy...juggling 2 teenagers and a toddler in addition to the fact that my maid just left to her country yesterday...so no help starting yesterday morning, my mom is a bit sick and under the weather and my best friend's father just passed away....this is really something...and here I am blogging as I know that today I won't have a second to spare or to spend on this blog (I am typing this at 11:30 pm yesterday but posted today)

Anyway, I promised you 5 appetizers, so far two are down and 3 more to go. So I won't be long today and will share a great Mediterranean appetizer with you...Another version of baba ghanoush...this time with no Tahini but a great taste of pomegranate molasses...

Baba Ghanoush 
Ingredients:
1 large eggplant roasted or broiled on top of the gas top (I like the 2nd method as it gives a smokey taste)
1 lemon, juiced
1 large clove of garlic, minced
1 small red onion, finely chopped
3 Tbsp parsley, chopped
1 Tbsp fresh mint, chopped
1 tomato, seeded and finely chopped
1/2 a green bell pepper, finely chopped or you can use hot green chili for a hot version of this appetizer
2 Tbsp pomegranate molasses
salt
pomegranate seeds and parsley for garnish

Directions:
Mix all ingredients in a food processor and pulse till combined (don't over mix)
Adjust lemon and salt
Garnish and drizzle with E.V.O.O
