No Knead Crusty bread; video



Happy New Year to all of you my followers around the globe and thank you for all you support to this blog which I hope will continue and thrive because of you. I have a lot of things that I am planning to share with you this year, so stay tuned.

2015 was a weird year, honestly, at so many levels, but looking at the bright side, it was a great year with the release of DarnaMagazine, the magazine which I co-founded along with my two wonderful friends Sawsan and Nisreen. Darna, an Arabic word for "our home" is an e-magazine that aims to show the world the beauty and richness of our Middle Eastern Cuisine. So far we have released 3 issues and are working on the 4th one to be released in spring of this year.

When I started this blog, I really wanted to share my passion for food and homemaking with my readers. It started in English then went to Arabic after so many requests from Arabic followers to write in Arabic, then I decided to use both languages. It is tougher to post this way but that is OK, it’s a challenge that I am willing to take on for the sake of this blog to cater to all my readers as google doesn’t translate very well.

So and as we always tend to start the year with resolutions…my resolutions for this blog are to firstly and most importantly plan better to ensure that I have regular posts going on. Due to a very busy schedule and many occasions, I have slacked in posting regularly and as much as I really would have wanted. So I am hoping that this will change this year with some more planning ahead.

My plan for this blog is to have a monthly plan where I want to post:
  • Frugal recipes
  • Copykat recipes
  • 4-5 ingredients videos and recipes (got to love those!)
  • A couple of craft projects (easy ones)
  • One monthly article to talk about a topic which my readers have requested more information about.
  • Two monthly recipes from the Daring kitchen
  • My weekly cooking menu every Friday to help you plan your main meals
  • One cooking class whether in detail photos or a video including baking and cake decoration
  • Ongoing advice and topics I get questions about. 

I do hope this will be my guide throughout the year so wish me luck and keep your fingers crossed for me.

If you have been following this blog, and I know that I do need to translate many recipes and articles in it, you will know that I am all for frugal cooking and creative dishes from ingredients at home. I also love meal planning and stock piling (to me it is the secret to be able to pull off great meals at a reasonable cost any time). So, for next month, I am planning a new challenge which is to start a stock pile along with my readers (especially the ones in Jordan) but feel free to join in. I will be talking in details about it in another post so stay tuned.

Here goes my menu for this week for the lunch meal, our main meal in the Middle East and dinner in the west.

Friday 1.1.2016: Moussaka & Chicken wings (yes my son hates eggplants, huge lose for him!!! So I have to make something that he would eat). Both recipes will be shared here later on.

Saturday 2.1.2016: Cauliflower stew (this is a delicious Middle Eastern dish which you need to try). Recipe will be shared here later on.

Sunday 3.1.2016: Homemade burgers and fries. (Check out the recipe for Middle Eastern burgers in Darna magazine)

Monday 4.1.2016: Spaghetti and a bead (will be the topic of my cooking class this month…so stay tuned for a detailed step by step recipe)

Tuesday 5.1.2016: Green peas stew (Another delicious Middle Eastern dish that will go under the frugal recipes and will be sharing later on the blog)

Wednesday 6.1.2016: Leftovers

Thursday 7.1.2016:Zatar chicken. Recipe is available in the first issue of Darna magazine (we used wings but it can apply to any part of the chicken)

Note: I might be moving a recipe up or might have leftovers so I won’t cook a particular dish. So I will be quickly reflecting on how I did in Next Friday’s post along with the new weekly menu.

So to kick the year off, I wanted to start with a video for a bread that I have been enjoying a lot with my family and when I posted the photo, my followers on facebook flipped over asking me how to prepare it. The great part about this is it has only 4 ingredients. So this video does serve my goal of sharing few ingredients recipes with you.

The recipe is very popular online; it’s the No Knead crusty bread. I have tried this recipe so many times so far and found out the following:

  • It is important to plan ahead as this loaf needs to ferment for one night before.
  • It is a no knead bread so kneading or a stand up mixer is not required. (Another plus for all people intimidated by kneading bread)
  • It is best to be eaten the same day, so if you have a small family, make half the recipe. Or you can use the leftovers to make a delicious panzenella salad.
  • This recipe is best made in a heavy duty cast iron pot (Dutch oven pot) to get the beautiful rounded shape (like the pictures), but in the video I decided to use a regular baking sheet to show my viewers who don’t own one, that they still can make and enjoy this bread.

No Knead crusty bread

Ingredients:
6 cups flour (I used all purpose, I liked it better than when I mixed whole wheat and all purpose, it’s to your own preference).
½ tsp yeast
2 ½ tsp salt
2 2/3 cups of water (room temp)

Directions:

  • Add yeast, salt to the bread.
  • Add water.
  • Mix with a wooden spoon and quickly with your hand to form a sort of dough. It will be very sticky, don’t worry.
  • Cover and let it rest overnight.
  • The next day, brush your kitchen table or top with some water.
  • Line with plastic wrap and heavily dust it with flour.
  • Transform the dough and form it into the shape you want, kneading gently. Let it rest covered for 1 ½ hours (for some reason this part is missing from the video)
  • Preheat oven to the highest temp or 200 c. If you are using a heavy cast iron pot, make sure to place it in the oven about 30 minutes before baking.
  • If you are using a baking sheet, dust it with corn flour. Transfer the dough to it using the plastic wrap to help you and form again. Cover and let it rest for ½ and hour.  If you are using a heavy cast iron pot, Knead the dough again and let it rest on the plastic wrap or parchment paper for another ½ hour.
  • Once ready to bake, insert the baking pan into the oven (I used the heat from the bottom and top with the fan going on.
  • If you are using the heavy duty cast iron pot, take it out quickly, dust it with some corn flour. And use the plastic or parchment to help you transfer the dough. Cover and bake covered till nice, golden and crispy.
  • Enjoy!!!



سنة جديدة ويا رب سعيدة ومليانة بالفرح والخير على الجميع... ومع بداية السنة الجديدة عادة بيكون في وعود جديدة...لنفسنا اولا بانه نكون اشخاص افضل...افضل بانا نساعد المحتاج، وننصر الضعيف، ونبدأ بتعديل حالنا وسلوكنا اولا قبل ما نطلق الاحكام على الناس وننزل فيهم انتقاد...للاسف احنا ومع وجود كل وسائل التواصل الاجتماعي ما عم بنخلي على ولا حد...اللي زعلان على طول بيكتب بوست وبيعمل هاش تاغ مقصودة...مش فاهمة انا ليش...هاد غير الانتقادات لناس ما بنعرفهم لمجرد طلعوا على التلفزيون وصاروا بموقع عام...وكتير للاسف باسم الدين ..

ما علينا، ما بدي ابدأ السنة بكلام محبط بس بتمنى انه نبدأ بانفسنا قبل ما نحكم على التانيين واذا الحجة الامر بالمعروف والنهي عن المنكر يا ريت يكون بمواجهة الشخص مش باستغابته...الله يهدينا ...

السنة الماضية كانت سنة صعبة بكل المقاييس خاصة على امتنا العربية...فيها احداث حزينة كتير من موت ولجوء وفقر وظلم وقهر...يا رب السنة الجديدة تكون افضل...بس بالرغم من هاد كله الحمد لله على نعمه الكثيرة..اكيد كل واحد فينا لو فكر بشكل ايجابي رح يلاقي اشياء كتير حلوة صارت بحياته...بالنسبة الي من الاشياء الحلوة كان اهمها على المستوى العملي والشخصي صداقتي مع شريكاتي وصاحباتي نسرين وسوسن واخراج مجلة دارنا للنور...اما على المستوى العائلي فصيفنا الماضي والحمد لله كان حافل بالاعراس والمناسبات الحلوة خاصة زواج بنات اخوات زوجي التنتين...لما وليان...الله يسعدهم ويهنيهم...واكيد اشياء تانية كتير بس هدول الاهم والاكثر اثرا السنة الماضية...

مدونتي السنة الماضية مرت بحالات من الركود للاسف بسبب الانشغال...مش عذر الحقيقة لانه جد بيزعل ...عندي كتير اشياء حابة اشارك فيها واحكي فيها وطلبات من متابعين لوصفات وجد الوقت ما عم بيساعد...عشان هيك من اهدافي للسنة الجديدة التخطيط بشكل افضل ليكون في وقت للمدونة بدون اي تباطؤ.. الله يسهل...

مع بداية السنة الجديدة وبداية بجو بارد جدا بعمان واحتمال سقوط ثلج ضحكت من قلبي على خبر انه الاردنيين اشتروا بحدود 2 مليون او اكتر رغيف خبز بيومين...اللي ضحكني هو بعض التعليقات زي "ول...عادينهم!!!" بس بنفس الوقت اشي محزن للبعض لانه هاد كل اللي بيقدروا يشتروه بهيك طقس ليسدوا جوع عائلاتهم (الله يفرجها على الجميع) وكمان اشي يدعو للتفكير انه اديش مهم التخطيط الشهري للمشتريات عشان ما نصير نتقتل على الاكل قبل الثلجة وتفضى رفوف السوبرماركت من الاكل....اللي حابب يستفيد من ملاحظاتي عن كيف تبني خزانة المونة ممكن يرجع لهاي المقالات


هاي السنة انا حابة اشوف اذا بقدر اثبت لكتير ناس انه موضوه بناء خزانة المونة ممكن وباقل التكاليف حتى بوجود دخل محدود....لانه كتير ناس بتفكر انه الموضوع بده كتير فلوس بس هو فعليا بده تخطيط والتزام وشطارة بالاستفادة من العروض المختلفة...عشان هيك رح اوجهلكم سؤال على الفيسبوك بحب كتير اسمع منكم عن هاد الموضوع فتابعوا الصفحة لنتفاعل سوا واقدر اني ارتب لتحدي جديد الشهر الجاي ونتشارك فيه سوا... فهاد رح يكون اول الاشياء اللي بدي اركز عليها بسنة ال 2016 وهي موضوع التوفير والتدبير...حكيت فيه كتير بس بدنا نشتغل مع بعض هاي السنة لنستفيد من خبرات بعض..

املي ان شاء الله انه كل شهر بالمدونة رح يكون فيه الاشياء التالية:

-          وجبات او اكلات توفيرية وبسعر معقول جدا مع تفصيل لتكلفتها بالمواد
-          رح يكون فيه اكلات زي المطاعم (بدنا نطبق بعض الاكلات اللي بنحبها بالمطعم بالبيت)
-          فيديوهات لوصفات فيها 4-5 مكونات فقط (تحدي كبير بس رح اورجيكم انه ممكن جدا)
-          وصفات تطبيق من مطبخ التحديات (وصفتين بالشهر) لاكلات عالمية
-          رح اشارككم منيو الاسبوع كل جمعة ان شاء الله...شو ناوية اطبخ J
-          مواضيع مهمة سالتوني عنها زي السكاكين وانواعها وغيرها من المواضيع المهمة...
-          مشروعين منزليين بالشهرلاشياء حلوة وبسيطة ممكن تعملوها بالبيت
-          درس طبخ شهري تفصيلي سواءا بالصور او فيديو ورح يكون باشياء منوعة من حلويات لتزيين كيك لمخبوزات
-          نصائح مستمرة من خلال البوستات المختلفة بالبيت والمطبخ وللاولاد
لذلك تفاعلكم معي مهم كتير سواءا على المدونة او على صفحتي على الفيسبوك او انستجرام او بنترست

قبل ما نحكي بالوصفة..منيو الاسبوع ان شاء الله هي:

الجمعة: مسقعة باذنجان وجوانح دجاج (طبختين لانه الاستاذ اللي عندي ..سلطان افندي ما بيحب الباذنجان...مش عارف شو رايح عليه والوصفتين بالجدول رح يكونوا على المدونة ان شاء الله

السبت: يخنة الزهرة بالبندورة (ضمن طبخات رخيصة ومحترمة وبنت حلال وبتشهي وبتدفي وشو كمان...؟!!! في احسن من هيك...ورح يكون في تحليل لتكلفتها

الاحد: برغر عربي...الوصفة على مدونة دارنا... مع بطاطا

الاثنين: اسباجيتي ونوع خبز جديد ان شاء الله رح يكون ضمن درس الطبخ لهاد الشهر وبالصور المفصلة

الثلاثاء: طبيخ بازيلا (طبخة ثانية رخيصة ومحترمة)

الاربعاء: بواقي

الخميس: دجاج بالزعتر (الوصفة موجودة كمان على مدونة دارنا باستخدام الجوانح وعلى مدونتي للدجاجة هون)

طبعا ممكن يصير تغييرات باخر لحظة ببقى احكي عنها الجمعة الجاي باختصار.

طيب نبدأ بسم الله الوصفة الاولى  للسنة وهي وصفة لخبز كتير زاكي....زكاوتة باديش بيقرش من برة وبيمضغ من جوه...زكاوته يندهن بزبدة اول ما يطلع من الفرن او يتغطس بزيت زيتون مع ملح...ياع عيني حنب صينية معكرونة...
هاد الخبز مميز وفي بنفس الوقت ملاحظات مهمة بحب اشارككم فيها وهي:

  • بيتكون هاد الخبز من 4 مواد بس (فهي اول فيديو ووصفة بمواد قليلة) وموجودة بكل بيت (مي، خميرة، ملح وطحين بس)
  • ما فيه زيت ولا حليب
  • بده تحضير قبل بيوم (شوفوا الطريقة)
  • ما بينعجن فاللي ما عندها عجانة رح يعجبها كتير
  • يفضل انه يتاكل وهو سخن وبنفس اليوم مشان هيك اذا عيلتك صغيرة اعملي نصف الكمية)
  • بواقي الخبز ممكن تعملوا فيها سلطة البانزنيلا الروعة واللي بدها مثل هيك خبز بيقرش
  • رح تلاحظوا بالفيديو انه الرغيف طلع مسطح اكثر من الصورة اللي فيها الرغيف مدور والسبب هو هاي 


هادي الطنجرة مصنوعة من الحديد الصلب وهي تقيلة كتير ...عشان يطلع الرغيف مدور بحطها بالفرن قبل نص ساعة من الخبز لتصير حامية كتير (مع غطايتها) وبحط الخز فيها وبدون دهن بس مع رشة طحين ذرة) وبغطيها وبخبزه هيك. الميزة انه رح يطلع مدور لانه ما في مساحة تتمدد فيها العجينة وكمان الحديد الثقيل والحامي رح يساعد بتكون القشرة الذهبية من كل الجهات. هلأ بالفيديو انا قررت اعمل الخبز بالصينية لاورجيكم انه بيزبط وبيطلع بنفس الروعة بس شكله مسطح اكتر ...لانه انا عارفة مش الكل عنده هاي الطنجرو وهي غالية بالمناسبة في منها ب Ace بمكة مول بعمان بس هي استثمار رائع مش عشان الخبز....كمان ممتازة لعمل الروستو والطواجن اللي بتحتاج لوقت طويل بالطبخ وبيطلع طعم الاكل رائع بسبب حفظها للحرارة.
قبل ما تسألوني: بيصير اعمل بفخارة الها غطاء؟ الحقيقة ما جربت...بوعدكم اجرب واخبركم النتيجة.


هي الفيديو والمقادير في الاسفل

رغيف الخبز المقرمش (بدون عجين)
المقادير:
6 اكواب طحين (عادي او مخلوط مع اسمر انا فضلت العادي)
1/2 ملعقة صغيرة خمية
2 1/2 ملعقة صغيرة ملح
2/3 2 كوب ماء بحرارة الغرفة (مش دافي)
الطريقة:
تخلط المقادير بملعقة خشب ويغطى ليرتاح ليلة ورح تكون عجينة دبقة ومش جامدة ابدا
اليوم الثاني ندهن كاونتر المطبخ ماء ونضع عليه ورقة بلاستيك لتلزق بالكاونتر
بنرشها منيح بالطحين وبنزل العجينة
نكورها ونرش وجهها بالدقيقة ونتركها مغطاة ترتاح ساعة ونص (مش عارفة هاي الخطوة وين راحت بالتصوير)
نحمي الفرن الى اعلى درجة حرارة (في حال استخدام الطنجرة اللي حكيت عنها بنحمكيها مع الفرن 1/2 ساعة)
في حال استخدام الصينية بنرشها بسميد او بطحين الذرة وبمساعدد ورق الباستيك بنزل الخبز (لانه بيلزق بالايد فهيك اسهل) وبنكورها وبنغطيها ترتاح 1/2 ساعة وبنخبزها (انا استخدمت الحرارة من فوق وتحت والمروحة)
في حال استخدام القدر بنعجن الهجينة بخفة مرة تامية ومنخليها ترتاح 1/2 ساعة بعدين بنطلع الطنجرة وبنرشعا شوية دقيق ذرة وبنزل العجينة وبنغطيها لتصير ذهبية
جربوه وخبروني النتيجة :)
