Cheese muffins and apple pie with an oil based crust




So many recipes keep pilling up urging me and screaming when are you going to find the time of day to post us...sigh!!! It seems these days and despite all the is going on in this head of mine that I have nothing to write...a complete and absolute writers block. Though to think about it there are so many things that I share with my snap chat followers that should be and deserve to be documented here as well. This blog is growing for sure and I hope that it will extend to start including all the activities going on in my life now. Cooking classes, catering, a lot of experience sharing on snap chat that is not all about cooking but about life, self growth, positive attitude, empowerment in addition to the usual household tips of saving money, time while taking good care of your self as well. YES!!! A LOT!!! Too many hats am wearing and there is only me and these 24 hours that don't seem to be ever enough to house all of this manic world of mine. There are many other things also on the way so stay tuned for yet more excitement.

I keep telling my self, just write it down and it will get done... well it works most of the times and the time window that I have is always too small..May Allah grants me his blessings in my time and efforts so I can always do what I love to do and show you how wonderful life can be were you are...enjoy every single moment in life and treasure it...its a great moment now and it will become a lovely memory later on when ever life hits you with difficulties. What may seem hard now might be a piece of cake later on...so stay positive and strong.

I would also like to thank my followers and fans...without you guys I won't be here and I won't be loving every moment of it...So THANK YOU !!!!

And as I have stated before and due to the pile of awaiting recipes to be posted, I will be posting 2 recipes in every post and today is no exception. Two wonderful and easy recipes that can be done with ingredients in your home...One savory and one sweet.


Cheese Muffins
Ingredients
1 1/2 cups flour
1/2 tsp sugar
1 tsp baking powder
1 tsp salt
2 cups cheddar cheese (I used a mix of Halloumi, emental and cheddar)
1 cup milk
1 egg
1 Tbsp vinegar
50 grams melted butter
For the top:
Cherry tomatoes and fresh thyme leaves (optional)

Directions:
Mix wet ingredients
Mix dry ingredients
Add wet to dry, mix until incoporated only. Its ok if the mix is lumpy
Heat oven to 180 and fill your cupcake pan with the mix (it makes around 12 muffins)
Top each muffin with a cherry tomato and a thyme leaf.
Bake until a tooth pick is inserted and comes out clean (around 12- 15 min)


The other recipe is for a lovely apple pie that I used to make when I was 17 using oil in the crust..no butter, no eggs...it was just perfect before and still is now as I evolved in the kitchen arena. The crust is crispy and light...maybe not as flaky as the butter based one but it is just as good and hey...frugal.


Apple pie
Ingredients:
Crust:
3 cups flour
3/4 cup oil
3/4 cup water
1 tsp baking powder
A dash of salt

Filling:
1 Tbsp butter
5 apples (preferably green) peeled, cored and diced
1 tsp cinnamon
3/4 cup sugar
1 Tbsp flour

Directions:
Start preparing the filling by melting the butter.
Add apples, sugar and cinnamon and let it cook till it releases it juices. Add flour and stir till a bit thicker and not much juice left. Let it cool.
Mix dry ingredients for the dough then add the wet ones and knead gently till it comes together and let it rest while the filling cools off.
Divide the crust into 2/3 and 1/3 for the top.
On a floured surface roll it out to the size of your pie dish. I used a metal one that is 16 cm in diameter.
Put the crust inside the dish and make sure it covers the sides. Add the filling.
Roll the other 1/3 of the dough and you can put it as is or cut it into stripes as I did or even use a cutter to make shapes and cover the pie
Preheat your oven to 180 c and bake for around 30 minutes till golden brown.
Enjoy with ice cream and caramel sauce.

الوصفات اللي لازم تنزل على المدونة كل مالها بتتراكم...يا ريت في اميوجيز هون كان حاطيت اللي بتلطم على وجهها...صور بستنى احن عليها وانزلها ببوستات بس شو اعمل لا الوقت مساعدني ولا مخي (مع انه مليان افكار ) بس مشكلة الكتابة مشكلة...ما في كلام مع انه الكلام كتير (عارفين شو قصدي :)

وصفات اليوم وصفة منهم مالحة ولزيزة والثانية حلوة وخريفية بامتياز وهي فطيرة التفاح بعجينة معمولة بالزيت وبالتالي سهلة واقتصادية



مفن الجبنة
المقادير:
1/2 1 كوب طحين
1/2 ملعقة صغيرة سكر
ملعقة صغيرة ملح
ملعقة صغيرة بيكنج باودر
2 كوب جبنة شدر (انا استعملت خليط من الحلوم والتشدر والامنتال لانه ما عندي تشدر كفاية)
كوب حليب
بيضة
ملعقة طعام خل
50 غم زبدة مذابة
للوجة:
حبة بندورة
اوراق زعتر

الطريقة:
تخلط المواد الجافة
تخلط المواد السائلة
تضاف السائلة للجافة وتخلط لتختلط فقط
يحمى الفرن الى 180
تسكب العجينة في صينية المفن (حوالي 12 حبة)
نضع حبة بندورة واوراق زعتر على الوجة
تخبز من 12-15 دقيقة لتجتاز اخنبار عود الاسنان



اما فطيرة التفاح فهي الوصفة
فطيرة التفاح
المقادير:
للكرست:
3 اكواب طحين
3/4 كوب زيت
3/4 كوب ماء
ملعقة صغيرة بيكنج باودر
ملعقة صغيرة ملح
للحشوة:
ملعقة طعام زبدة
5 تفاحات خضر مقشرين ومقطعين مكعبات
ملعقة صغيرة قرفة
3/4 كوب سكر
ملعقة طعام طحين

الطريقة:
تحضر الحشوة باذابة الزبدة ويضاف التفاح والسكر والقرفة وتقلب لتخرج السوائل منهت وتطرى قليلا
يضاف الطحين وتطبخ عدة دقائق ليختفي الطحين وتسكم الصوص وتترك لتبرد تماما
تحضر العجينة بخلط المواد كلها معا وتعجن لتتماسك وتترك لترتاح 1/4- 1/2 ساعة
يؤخذ 2/3 العجينة وتفرد وتدخل لقالب الباي (حوالي قطر 16 سم) لتكون ممتدة للحواف
نضع الحشوة الباردة
نفرد الثلث المتبقي من العجينة ام لتغطية السطح تماما او حبال او بالقطاعة يمكن عمل اشكال
تخبز بفرن حامي على 180 حوالي 25-30 دقيقة لتحمر
تقدم ساخنة مع البوظة وصوص الكراميل
