جد حاسة حالي بعالم تاني...ولا جاي على بالي اعمل اي شيء...مش من طبيعتي اكون هيك ابدا...بس الارهاق سبب رئيسي لشعوري الكسل العام ومع ذلك ولاني متأخرة جدا بتطبيق وصفة شهر 1 من مجموعة نكهة عربية استجمعت قواي امبارح لاعمل تحدي شهر 1 وهو من سوريا ومن الشيف محمد سحسول واللي اتدانا نطبق البرازق السورية...مممممممممم...الريحة وانا بخبزها ولا اجدع مخبز...جربوها رح تحبوها كتير


شيف محمد سحسول شاركنا بالوصفة كالتالي

البرازق حلوى سورية الأصل ، تعتبر من أشهر الحلويات الشرقية ، موطنها الأصلي العاصمة السورية دمشق , تتربع على عرش الحلويات الجافة , يعود تاريخ صناعتها إلى زمن الخلافة العثمانية للوطن العربي وهي عبارة عن قطع دائرية هشّة مغطّاة بالسمسم. تحضّر من السمنة ، السكر ، الطحين ، الحليب ، السمسم ، الفستق الحليب , المحلب .


البرازق
المكونات :
1 كغ طحين ابيض
نصف كيلو سمن عربي " غنم أو بقر " يمكن استخدام السمن النباتي
300 غ سكر
200 مل ماء
 ملعقتين كبار حليب بودرة
 نصف ملعقة صغيرة محلب

مقادير السمسم للوجة :



كيلو سمسم محمص 
كاسة شاي سكر خشن
 كاسة شاي مربى المشمش مطحون
 نصف فنجان ماء

الطريقة :



تخلط المكونات الجافة ما عدا السكر ونضيف السمن ونعجنها حتى تعجن ويتشرب الطحين كمية السمن نذيب السكر بالماء ونضيفه للعجين مع الاستمرار بالعجن سيتشكل لدينا عجين طري شبيه بالكريما نضع العجين بالبراد لمدة نصف ساعة تقريبا  قبل البدأ بتشكيل البرازق



نخلط السمسم مع السكر ومربى المشمش ونضيف لهم الماء ونخلطهم جيدا ً



نشكل البرازق على شكل كرات بالحجم الذي نرغب
نضغط على الكرة بين راحتي اليد لجعلها رقيقة
 نغطسهم بالفستق الحلبي من جهة (اختياري)
وبخليط السمسم من جهة اخرى
نحمي الفرن على 180 ونخبزها لتتحمر 
(حوالي 10-12 دقيقة ) وممكن اكتر حسب حرارة الفرن

انا عملت نص الكمية وطلعت ممتازة
ضروري تضغطوا على العجينة بين راحتي اليد لتطلع الحبة رقيقة وبتقرش
انا بطنت الصواني قبل الخبز بورق الخبز

I feel as if I have been living in another world, I just don't feel like doing anything these days..this is not like me at all but I guess I am exhausted after the trip to Dubai and after a week of being sick with a bad case of flu. I have also been late in applying January's recipe for the Arabic Flavor group but yesterday I decided that I need to snap out of it and go for it. I made the famous Syrian sesame cookie "Barazeq" the recipe of Chef Mohammad Sahsoul from Syria who shared his recipe with us and boy what a great smell filled the house while I was baking the first batch...give it a try..it is so easy and delicious..


Chef Mohammed Sahsoul said in his presentation of the recipe that it comes from Syrian Origins. It is considered one of the most famous Middle Eastern desserts originally from Damascus, the Capital of Syria. It is considered the queen of cookies and goes back to the Ottoman days when they ruled the Middle East. It is simply a very delicate, crunchy sesame cookie prepared using Ghee, sugar, flour, milk, sesame, pistachios and Mehlab (a famous Middle Eastern spice that comes in the shape of little earthy colored balls 
.and is usually ground to add great flavor to many Arabic dishes)

Barazeq
Ingredients:
1 kg flour
500 g ghee (you can use butter)
300 g sugar
200 ml water
2 Tbsp powdered milk
1/2 tsp ground Mehlab

For the topping:
1 kg toasted sesame seeds
1/2 cup sugar
1/2 cup smooth apricot jam
1/3 cup water
Coarsely ground pistachios

Directions:
Mix flour with milk and Mehlab and ghee until will combined in a mixture
Add sugar to the water and stir till all sugar is almost melted, then add to the flour mixture until you have a soft dough
Cover and let it rest in the refrigerator for 1/2 an hour
Take out and start making small balls till all is done, cover while your prepare the topping
To make the topping, mix all ingredients except for pistachios
Now flatten each ball in the palm of your hands till very then dip one side in pistachios and the other in sesame mixture
Line your baking sheet with parchment paper and arrange done cookies
Heat oven to 180 and bake for about 10-12 minutes till golden brown
Let it rest on the baking sheet then cool on a wire rack.
Enjoy these little addictive crunchies with a cup of tea or coffee.
