محشي الجزر الاحمر بالتمر الهندي Stuffed Red Carrots in Tamarind Sauce

مع صعوبة الاوضاع اللي بنمر فيها بالمنطقة هالكم يوم (كم يوم مين...من يوم ما وعيت واحنا بنمر بازمات وصعوبات...الله يعين) عم بتزيد اهمية فكرة التمسك بقيمنا (اللي باقي منها على الاقل..للاسف)..مهم نحافظ يا جماعة على اللي باقي لانه والله مش كتير...ولادنا هالكم يوم وجيل هاليومين زي المغسول مخه ما بحكي ولا بفكر الا بالانجليزي..ما اله دخل باللي بيصير حولينا...مهم نوعيهم..مهم نشاركهم...مهم نحكي معهم..

انا واحدة ما الي بالسياسة ولا بفهم فيها ولا بدي افهم ...بس اللي بقدر عليه لازم اعمله وكل في موقعه وفي مجاله بيقدر يعمل اشي...بالاكل وهو مجالي رح احاول اضل احط وصفات قديمة...وصفات عربية كتير من جيل اليوم ما بيعرفها...قبل فترة عملت كم بوست بالمدونة تحت بند اكلة وحكاية ومن هالاكلات كانت حبة الرمانة (الرمانية) ورز وعدس والبصارة..اكلات اذا لاحظتوا نباتية (لانه زمان اهلنا مروا بظروف اقتصادية صعبة) بس كانت اكلات بركة وصحية ولذيذة وخسارة اذا جيل اليوم ما تعلمها رح تروح وتنطوي ومش بس هيك في ناس عم تستولي عليها وتدعي انها الها زي كتير من اكلاتنا العربية اللي نسبهوها الاسرائيليين لحالهم...زي الحمص والفلافل والكسكسي...اشي بيسم البدن...حتى للاكل وصلت الامور..شو نعمل؟!!!! واجبنا احنا الستات والامهات نعلم اولادنا وبناتنا هاي الاكلات مشان ما تنتسى وتاريخها ومن وين اجت عشان يعلموها لاولادهم ويدافعوا عنها ويحافظوا عليها وانكم تدعمونا احنا الناس اللي النا تواجد على مواقع الانترنت والتواصل الاجتماعي من خلال التطبيق والمشاركة لنحافظ على تراثنا ...قبل ما ينسرق اللي باقي منه...يا ريت الكل يشتغل على هاد الموضوع... يعني بتقدروا تتخيلوا ردة فعل واحدة هندية تسمعني بقول كاري عربي ..الكاري هندي وبس...ولا اصحابنا الطليان اللي يا ويل ويلنا لو تعدينا على البيتزا او المعكرونة تبعتهم..وبالمناسبة همه بيطلعوا على البيتزا تبعتنا باشمئزاز ولا يعتبروها تمت للبيتزا الايطالية بصلة...فالبيتزا مش امريكية ولا استرالية..ايطالية وبس...وكمان وبقولها بعلو صوتي...الفلافل والحمص والتبولة والمنسف والمفتول اكلات عربية 
ونقطة انتهي!!!!


من الوصفات اللي اشتهرت بفلسطين زمان وكتير ناس ما بتعرفها وكتير ناس بتعرفها هي محشي الجزر الاحمر...انا بحبه كتييييير..ويمكن هو المحشي الوحيد اللي كل اهلي (ابوي وامي واخواني) كانوا يجتمعوا على حبه وما شاء الله تطبخ منه امي كمية...اللي ما بيعرف الجزر الاحمر هلأ موسمه وبتلاقوه عند الخضرجي بس الصعوبة فيه هو عمليه حفره لانه قاسي...جدي ابو امي الله يرحمه كان عنده 8 بنات و3 اولاد ما شاء الله ...وقادرين تتخيلوا كم كيلو محشي جزر لازم ستي تعمل عشان تشبع العيلة...بدهم كمية كبيرة كفيلة بانها تكسر ايد ستي الله يرحمها وهي تحفره..فكان يستعمل الدريل عشان يساعدها ويخفف المهمة وصعوبتها...هالايام بتلاقوه محفور وخالص بالسوبرماركت وعند الخضرجي ومؤخرا مع كيس صغير من اللب الداخلي...طبعا انا مش مستعدة اضحي بايدي فجبته محفور وخالص :)
ولانه انطلب مني فهي احلى (وجد طعمه بين الحامض والمالح والحلو...رهيب) محشي جزر احمر


محشي الجزر بالتمر الهندي 
المقادير:
كمية من الجزر المحفور (انا نقيت حبات صغار ووسط ليستوي بسرعة)
كمية من اللب الداخلي من الحفر (حوالي 3 كوب)
حشوة محشي: رز ولحمة مفرومة خشن وبهارات مشكلة ورشة زيت نباتي وملح)
زيت غزير للقلي
1/2 باكيت تمر هندي (انا عملت 10 حبات بس...لانه انا الوحيدة اللي باكلة بالبيت وآه 10 حبات الي لاني مستعدة اكله كل يوم ليخلص) :)
كوب ماء ساخن لنقع التمر الهندي
ملح

الطريقة:
تحشى حبات الجزر بالحشوة مع مراعاة عمد رص الحشوة لضمان انها تستوي
يحمى الزيت ويقلي اللب عدة دقائق ويصفى من الويت ويوضع بقاع القدر
تقلى حبات الجزر (مثل المخشي) وتصفى من الزيت وتصف فوق اللب
يضاف ماء مغلي على الجزر ويطبخ ليستوي 3/4 استواء )
في هذه الاثناء نحل التمر الهندي بالماء الساخن 1/4 ساعة على الاقل ويدعك ويصفى
عندما ينضج الجزر تقريبا نضيف التمر الهندي مع الماء ونضبط الملح والحموضة 
يترك 10 دقائق على نار هادئة ليتسبك
يسكب ويقدم ساخن والف صحة


English Version of the post

It has been tough times here in the Middle East since ..well..since I can last remember...tough and testing times where we do need to keep our solidarity as humans against all bad in this world and against injustice...the sad part is that I feel our children (the next generation) are totally not into any of the new developments in the region..they simply don't care or at least some of them. Our duty as their parents is to make sure that they are aware of what is going on around them and how to stand up for their heritage and their traditions. 

Don't get me wrong here..I am not a politician and neither do I understand politics..I even don't attempt to because it is as they say "a Very dirty game" and I am not planning to get involved. All what I say that each one of us, from his line of work and his position in this society needs to do something to preserve whatever we have left from our lost and stolen heritage. Since I am a foodie..my role is to make sure I do preserve our traditional recipes..the ones that my and your grandmother used to make and to keep their heirloom from being lost forever. I have attempted to do a series of posts before preserving many dishes like Rice and lentils, Rumania (lentils with eggplants and pomegranate syrup) and Bisara (the split fava beans dish with dried mulukia) and some other dishes. I have decided to dedicate more time for these recipes on this blog in the aim to make sure that the new generation is aware of these dishes, that they won't fade and be gone forever and to celebrate our great heritage through food...one of the most important elements in any culture. It truly ticks me off when I see many of these recipes being stolen literally and given to other nations...to name a few..Israeli couscous...a very famous pasta like dough that has been made in palastine, Lebanon and Morroco since a long long time ago..Hummus and Falafel...are you kidding me...these are not Israeli foods and never will be...they are our own heritage and our own pride...no one will take this from us..they took our land and now our food...NO...NO...NO...I can imagine the reaction of an Indian lady seeing a post that show a picture of a curry with a name like "Arabic Curry"!!! How would that feel and be like!!!! Curry regardless what kind is simply Indian..Indian only...Pizza is Italian and let me tell you that Italians are so passionate about their food that they don't think that our versions of pizza is the real deal...so Pizza is not American, it is not french neither it is Arabic...Escargot is French...not Australian, not Danish or Portuguese...It is as simple as that..Hummus, Falafel, Tabooleh, Maftoul (Palestinian Couscous), Mansaf are ARAB...and from the Sham region (Lebanon, Syria, Palestine and Jordan)...End of discussion!!!! 

So here you come in my friends..you need to help us preserve our heritage.. you need to teach your children about these dishes, what the story behind them is, where do they come from...etc.
Today's dish is very famous in Palestine..many people are familiar with it while others don't know it exists..including the cashier where I bought the ingredients from..the dish is the stuffed Red Carrots in Tamarind sauce..the Cashier was like..what in the world is this stuff? What are you planning to do with it? Well...Delicious Mahshi...I replied... 

So here it goes...and if you wonder what it tastes like..its sour, sweet and yummy...you can find it these days in Supermarkets in the Middle East already hulled...my grandfather used to use a Drill to hull the stoborn tough carrots for his family of 11 children..you can only imagine how many carrots they had to hull for the whole family...so the drill was the solution...I bought mine already hulled..Thank God for modern days...

Stuffed red carrots in Tamarind sauce
Ingredients:
Hulled red carrots
A bag of the inner part of the carrots (this comes in a bag with the carrots)
Rice stuffing: Soaked and drained short grain rice, coarsely ground lamb, Arabic spices blend, salt and pepper, a dash of oil
1/2 pack of Tamarind (for 10 carrots) soaked in 1 cup of hot water for 15 minutes..squeezed and drained
Deep oil for frying carrots
Salt

Directions:
Stuff carrots with the stuffing making sure not to over stuff them and to leave some space for the rice to expand while cooking
Heat your oil and fry the inner part of the carrots first for few minutes, drain and line your cooking pot with it
Fry the stuffed carrots on all sides and drain well from oil
Add carrots and arrange on top of the fried inner part
Pour hot water and let it cook till almost cooked through when pierced with a knife
Add the Tamarind water after draining it from the Tamarind and adjust salt and pepper.
Let it cook for few minutes and serve hot...

  3. مرحبا منال يسلم ايديك يارب عالمحشي قبل كم يوم لسه عاملة طنجرة كبيرة أكتر من 20 حبة وعزمنا عليهم ناس هون بتعرفي بالغربة الناس بتشتهي والحمدلله أنا زيك مش مستعدة أفحره فببعتولي اياه أهلي مفحور وجاهز امي أو حماتي بتفحره حسب مين اللي ببعته بفحروه نص فحره وأنا بكمل شوي عليهم عشان أطلع شوية لب للقاع وبقحطه ما بقشره أحسن وطريقتنا شوي مختلفة بانه ما بقلي اللب ولا الجزر بس أهلي بحمضوه بتمر هندي ودار حماي بليمون وكله زاكي وأنا بكتر الحشوة عشان يزيد وأحطه بصحن فوق الطنجرة بطلع مسقسق بمية الجزر وكله مع العافية زاكي وصحة وهنا على قلبك منال حبيبتي وشكرا لأنك بتدافعي عن أكلاتنا الحلوة والله بحبها أكتر من هالأكلات الجديدة مع اني بحب أجرب كل شي جديد دايما :)
