Arugula & Walnut Pesto (video)



I love pesto...I remember the first time I was introduced to it was in Canada when I ate, terribly enough, a frozen pasta dish with chicken and pesto, and honestly it was delicious..hahaha...but when I made the real deal, now that was a completely different level of deliciousness..not even comparable to the frozen version.

I was very happy to know that there are more options in making pesto simply because I thought the basil version was way too fragrant to my taste (I usually mix it with some parsley). Moreover, and though basil now is much more available in Jordan, it is slightly expensive especially during winter time, so why not use something else that is fragrant (in a different way); Arugula. Arugula is so nutritious and is sooo available here in Jordan. A bunch is around 20 cents ...now that is a price you've got to like. So next time you want to make pesto, do give Arugula a shot and you will love it. I made a pasta dish and it was very tasty. And here is another recipe for pesto with bread.

But before that, lets do the weekly review of how I did this week in terms of my weekly menu...I have to say that I did well this week and had some leftovers so the chicken dish is going to next week.

Grilled whole fish with Tahini sauce
Middle Eastern Green peas stew
Homemade burgers and fries
Zucchini cooked with lamb in yogurt sauce
A Chicken dish
Spinach stew

As for this upcoming week, here is the plan

Friday 15.1.2016: Spaghetti 

Saturday 16.1.2016: A Chinese dish using the head of Napa cabbage I have in the fridge. Will let you know what that is next week.

Sunday 17.1.2016:  Fried Chicken 

Monday 18.1.2016: Mulukhia (A delicious Mallow leaves Middle Eastern dish that my family adores), will be sharing here. 

Tuesday 19.1.2016: Leftovers

Wednesday 20.1.2016: Stuffed cabbage (Middle Eastern way)

Thursday 21.1.2016: Pizza

Note: This pesto would make a great gift from your kitchen


Arugula walnut pesto
Ingredients:
1 bunch arugula, washed and drained
1/3 cup Walnuts, toasted and cooled
1 clove of garlic
1/2 cup Parmesan
1 tsp lemon zest
2 Tbsp lemon juice
salt
1/2-3/4 cup EVOO

Directions:

Pasta with Arugula pesto and grilled tomatoes
Ingredients:
250 grams pasta of your choice (I use a spiral one called Fusilli bucatini)
1 cup of pesto (less or more depending on how you like it)
10 cherry tomatoes
1 Tbsp EVOO
Salt
Pepper
Parmesan cheese for sprinkling on top

Directions:
Mix tomatoes with oil, salt and pepper. Roast in the oven for 15 minutes or so till soft and juicy.
Boil pasta and drain
Mix with pesto, top with grilled tomatoes and sprinkle with cheese. 





مين ما بيحب البستو؟ طبعا لو اقول بستو لكتير ناس بالاردن قبل كم سنة كان بيجوز فكروها ابصر شو...مش معقول اديش العالم صار واحد مع كل التكنولوجيا وهاد اشي رائع بالتأكيد اذا عرفنا كيف نستخدموا صح...بتذكر لما كنت اجي زيارات من اميركا واصير بدي اطبخ لاهلي طبخات لزيزة معروفة هناك يبدأ التخويت من 3 شباب (اخواني)  قاعدين على السفرة على الاسماء....ههههه بس ولا بيهمني...هلا صار كل واحد فيهم افلسف من الثاني....سبحان مغير الاحوال...لانه واحد عايش باميركا وواحد بيشتغل بالادارة بالشحن والتخليص بكارفور (فبيعرف اسماء اكل اكثر مني) والثالث درس باميركا وهلا ما بيرطن الا بالانجليزي هههههه

المهم نرجع للبستو....انا شخصيا بحبه كتير بس الريحان مرات بيكون مش متوفر ومرات غالي...طيب شو البديل...حبيب الشعب الجرجير...ماله؟!!! رخيص ومحترم وابن حلال وبيعمل بستو بيشهي...

بستو الجرجير والجوز
:المقادير
ضمة جرجير مغسولة ومنشفة
1/3 كوب جوز محمص
1/2 كوب بارمزان
ملعقة صغيرة بشر ليمون
2 ملعقة طعام عصير ليمون
حبة ثوم
1/2 - 3/4 كوب زيت زيتون

شو استعمالات البستو؟
انا عملت معكرونة وممكن تضيفوا دجاج وممكن تستعملوه بالبيتزا بدل الصوص الحمراء وممكن مع الخبز زي هاي الوصفة  وممكن مع السلطة


معكرونة بالبستو والبندورة المشوية
المقادير:
250 غم معكرونة (انا استعملت لولبية طويلة وممكن بس لولبية وممكن اي نوع بتحبوا زي الفتتوتشيتي او الاسباجبيتي او البيني)
مسلوقة
كوب بستو
10 حبات بندورة كرز
ملعقة طعام زيت زيتون
ملح، فلفل اسود
بارمزان للوجة

الطريقة:
تخلط البندورة مع الزين والملح والفلفل الاسود
تشوى في الفرن حوالي  دقيقة لتطرى
يخلط البستو مع المعكرونة
توزع البندورة على الوجة
ترش بالبارمزان.

ملاحظة: يمكن الاستغناء عن البندورة واضاف البندورة المجففة المكبوسة بالزيت والدجاج المسلوق ايضا.

  3. I have never made pesto before but I love the shop bought stuff. I really must have a go at making my own - your recipe sounds like the perfect one to start with. :)

    1. I am sure there are great ones available at the store but the aroma of the garlic with the oil, the herbs, the nuts..the whole thing is so delicious...try a fresh version and you will convert :)

  4. I love pesto! I don't recall ever making it with walnuts though, always pine nuts, but I'm definitely going to give this version a try next time I make some!

  5. I've started experimenting more with pesto, too - love the idea of using arugula, I'm sure it's delicious. Plus, pine nuts are so freaking expensive it's good to know you can switch out the nuts - I like to use walnuts in my pestos, too :)

    1. I couldn't agree more April...Pine nuts are so expensive every where and it is so nice that there are other cheaper options...the same goes out for Basil here in Jordan so Arugula is a nice choice. Thanks for stopping by
