Middle Eastern Spinach & meat stew



I just love to think that I am feeding my family great nutritious food at a very good price. Looking for frugal and nutritious recipes has always been a quest of mine because I know that as a wife and a mom, saving money from your monthly budget can really help in so many ways whether you decide to take the family out to a fancy place, or save the money to buy this nice gadget for the kitchen, or even pay bills...what ever the reason is, saving money is something that I just love and have been enjoying very much.

When I lived in the US, I used to do coupons and I miss it sooo much. I was one of those ladies who walked away with tons of food for free...seriously!!! There was this one time where the total was minus 13 cents!!!!! You should have seen the look on the casheirs face who just said "I am not paying you 13 cents!!!", my reply was with a big fat smile (while I was literally doing the happy dance inside) "Don't worry, I am pretty happy to walk away with my free groceries"!!! The good old days. I used to use what I buy to stock pile, donate to the food bank, make homemade gift baskets to friends...it was so much fun seriously...

Anyway, now that I am back here in Jordan, we don't have coupons but we do have many other options to save money. One of which (and it applies every where) is to cook in season. Its winter and spinach is just everywhere now at a very cheap price. So we have this delicious main dish, Spinach stew with ground lamb that is so good, nutritious and cheap. The dish is very popular in the Levant area simply because we grow spinach locally and it is usually sold in huge bunches. We love making tangy pomegranate & spinach pies and I do sell those as part of my catering business. The below picture is a new shape (the traditional way is to have it in a triangle shape)



Another great dish we make is Spinach Tabouleh...




So here is the 2nd frugal recipe for January as promised at the beginning of the month.



Middle Easter Spinach & Lamb stew
Ingredients:
2 kilos of spinach leaves, washed and roughly chopped
300 g ground lamb or beef, I used beef
1 large onion, minced
3 tbsp ghee or butter
Salt, pepper
1/2 cup flour
2 cups chicken stock
Toasted almonds or pine nuts (optional)

Directions:
In a frying pan, melt half the ghee amount and cook the onion till soft and translucent.
Add ground lamb and cook all the way through.
Season with salt and pepper
Add the Arabic spice blend.
In a large pot, melt the rest of the ghee, add spinach and sprinkle with some salt (you might have to do it gradually as the spinach will wilt down while it cooks allowing you to put more leaves to cook down as well). 
Once the spinach is cooked, add the flour and cook for few minutes
Add hot stock or water and stir to prevent any lumps.
Cook for few minutes then add the cooked lamb. Cook for around 5 min over medium heat and re-season if needed.
Serve hot with rice and toasted pine nuts or almonds on top.

اظن اغلبنا هيك...مين بتزعل اذا وفرتلها شوي على جنب لتشتري خلاط ولا لتدفع فاتورة ولا لاي غرض تاني ويا مكتر الطلبات والمتطلبات هالايام والله يعين الناس. عشان هيك كتير مهم نفكر نطبخ الاكل بوقته. هلأ موسم السبانخ وانا الصراحة بحبه كتير وبعرف كتير ناس بتعاني انه اولادها ما بحبوه كتير....بس في طرق لطبخه تساعد ومنها الطريقة اللي رح احطها اليوم لتكسر من حدته شوي ويصير اكثر كريمية...جربوها وانا متأكدة كتير منكم بيعملها بس هاي للي ما بيعرفها بنصح يجربها. وهي ما بتحتاج لليمون جنبها زي الطريقة الاعتيادية. واعتقد اهل الخليل بيعملوا لبن مسنون بالثوم وبيتقدم جنب السبانخ بالطريقة التقليدية ليكسر حدة طعمه والحقيقة انه زاكي كتير كمان.

طبعا لعشاق السبانخ في كتير وصفات غير الفطاير ومنها تبولة السبانخ 


وكمان سلطة السبانخ والفراولة 


وقبل ما ابدا بالوصفة بس عشان تشاركوني تفاصيل تكلفتها

السبانخ طلع ال 2 كيلو ب 44 قرش (من كارفور)
اللحمة ب 1.10 دينار 
البصلة ب 10 قروش
الطحين ب 10 قروش (ومبالغ فيه جدا لاني بشتري ال 10 كيلو ب 3 دنانير من كارفور)
زبدة ب 30 قرش (وممكن تكون ارخص)

يعني اكلة كاملة بدون الرز كلفت اقل من دينارين...ممتاز 



يخنة السبانخ بالطحين
المقادير:
2 كيلو سبانخ
بصلة كبيرة وفرومة ناعم
300 غم لحمة مفرومة ( انا استعملت بيف، انتو استعملوا اللي بتحبوه)
3 ملعقة طعام زبدة او سمنة
2 كوب ماء ساخن او مرق دجاج
1/2 كوب طحين
ملح، فلفل اسود
ملعقة صغيرة بهارات مشكلة
صنوبر او لوز مقلي للوجه (اختياري)

الطريقة:
ينقى السبانخ ويفرم خشن ويغسل وينشف
تقلب البصلة بنصف كمية السمن لتذبل
تضاف اللحمة وتقلب لتنضج
تضاف البهارات والملح
في قدر اخر تذاب الزبدة او السمن ويضاف السبانخ مع رشة ملح ويقلب ليذبل
يضاف الطحين ويقلب عدة دقائق ثم الماء الساخن
تترك لتغلي ثم تخفض الحرارة وتطبخ عدة دقائق
يضاف اللحم ويطبخ الكل معا لتقل كمية السائل قليلا ويسمك 
يقدم ساخن مع الارز ويرش بالصنوبر او اللوز المقلي

    1. Thank you Dear... Yes unfortunately not many coupons in Canada ... You can only imagine my disappointment when I moved there from Texas... I had to pay for groceries hehehe
