Tapioca Vanilla pudding with strawberries


Happy Friday everyone!

Fridays in the Middle East are just like Sunday's in the west. It is family day. The day where we have the 3 meals together for a change and where we visit family & friends or go out for a picnic...etc. Friday's are used to be my day off cooking when I used to work. I needed to feel that I am off from everything to reinvigorate and get my energy level back to for the week ahead.

Now that I am off from working out side my home, I make sure that Friday's do include a nice meal for the family where I have my mother in law with us for lunch (the main meal here).

As discussed a previous post, today is the day to reveal my menu plan for the next week. But before doing that, let me share with you briefly how I did this week.  (the highlighted in red are the ones that I cooked while the others didn't make it this week)

I was supposed to do:
Moussaka
Chicken wings
Cauliflower stew
Burgers & Fries (I had leftovers, so this moved to this upcoming week)
Spaghetti & Bread (instead I did this fab Arugula walnut pesto pasta which I will be sharing this week with you in a video for the pesto) & made the bread which will also be shared this month in a monthly cooking class on this blog with step by step pictures. 
Green peas stew (I had leftovers, so this moved to this upcoming week)
Zatar chicken

Additional dishes I made because I wanted to use what I had:
Margarita pizza  (I had some dough that I needed to use); we ate it with leftovers
Pumpkin soup ( I just needed something to warm us up and I have some roasted pumpkin puree in the freezer along with stock, so I used that)

So not bad...

Friday 8.1.2016: Grilled whole fish...you bet I will be sharing this recipe with you as well... I told you a lot of great stuff are coming your way :)

Monday 4.1.2016: Zucchini cooked with lamb in a yogurt sauce. A great Middle Eastern stew that is soooo delicious, tangy and creamy.

Tuesday 5.1.2016: A chicken dish...not sure what yet...but I have some chicken in the freezer. Whatever that will be, I will let you know next Friday when I review this again

So this is it for this weeks ahead and I will let you know how I did next Friday.

Today's recipe is a gluten free recipe for a lovely pudding with an unusual thickening agent (not very popular in the Middle East as we usually use corn starch or flour); Tapioca Vanilla pudding with strawberries. I used Tapioca pearls, for anyone of you who is not familiar with these..it looks like this..




These happen to be green, in Amman, you can find these and the white ones in the Asian food section in large supermarkets and they are not expensive. And by the way, this is an old photo...just in case you see the expiry date ...I don't have a package on hand so I had to use this old photo :)

This is a very easy dessert and it is very delicious. My mom was so excited about it and she immediately went to the supermarket to buy some Tapioca. Her first question to me was " What was that delicious thing in the pudding...it tasted great!!!". Of course, my mom, is my number 1 fan, but I have never seen her excited about a dish I made like she was about this one. I guess because my dad loves creamy desserts so this was a nice and unusual change for them. 

Tapioca Vanilla pudding with strawberries
Ingredients:
2 cups water
1/3 cup Tapioca pearls
1/2 cup milk
1/2 cup cream (use milk if you prefer)
2 tsp vanilla 
1/2 cup sugar
10 strawberries chopped 
2 Tbsp sugar
Garnish:
Chopped strawberries
Toasted almonds

Note: To make this Dairy free, use coconut milk and cream..it will be delicious...

Directions:
Mix 2 tbsp sugar with strawberries. Let them sit for 20 min then fill the bottom of your glasses with about 2 Tbsp of the mixture
In a pot, bring water to a boil, add Tapioca pearls and stir. Lower the heat and let it cook for around 10 minutes till it becomes a bit translucent in color and thick. Add milk, cream, sugar and whisk. Cook for 3 minutes then add vanilla.
Take off the heat and put it in another bowl and cover with plastic wrap (to touch the surface) Let it cool completely. 
Add over the strawberries and refrigerate for 4 hours.
Garnish with strawberries and toasted almonds

اتفقنا انه يوم الجمعة اشارككم بمنيو الاسبوع اللي جاي..بس قبل خليني احكي كيف كان ادائي الاسبوع الماضي..
الطبخات اللي كنت بدي اعملها كانت (اللي بالاحمر يعني انعمل والا في سبب )
مسقعة يونانية واجنحة دجاج
يخنة زهرة بالبندورة
برغر وبطاطا (تأجل لهاد الاسبوع لانه كان في بواقي الحمد لله)
بازيلا طبيخ (تأجل لهاد الاسبوع لانه كان في بواقي الحمد لله)
اسباجيتي وخبز ما عملت الاسباجيتي بس عملت معكرونة ببستو الجرجير وصورت البستو فيديو رح اشارككم فيه الاسبوع هاد ان شاء الله)
دجاج بالزعتر

طبخات ما كانت على المنيو 
شوربة قرع (كان عندي مرق بالفريزر وقرع مسلوق ومهروس ومع البردات كان لازم شوربة)
بيتزا مارغريتا (مع بواقي اكل وكان عندي عجينة زحبيت استفيد منها)

تمام انجاز مش بطال...والحلو الاكلات اللي ما انعملت بتترحل على هاد الاسبوع 

الجمعة: سمك مشوي 

السبتطبيخ بازيلا 

الاحد: برغر عربي...الوصفة على مدونة دارنا... مع بطاطا

الاثنين: مطفية كوسا باللبن

الثلاثاء: طبق بالدجاج (لسة ما قررت شو بس بخبركم اكيد)

الاربعاء: بواقي

الخميس: طبيخ سبانخ (ضمن اكل رخيصة وموفرة)

وبرضه بنراجع كيف طبقت الجمعة الجاي ان شاء الله 

وصفة اليوم هي لتوع كتير زاكي من المهلبية بيستخدم حبوب التابيوكا بدل النشا...وهي بالتالي خالية من الجلوتين وممكن استبدال الحليب والكريما بحليب جوز الهند وبتصير خالية من الحليب للي عندهم حساسية...
وبيستخدم كتير بالاكل الاسيوي والحلويات بالذات... اله قوام لذيذ بالاكل ومختلف عن المهلبية العادية...اللي ما بيعرفه وانا متأكدة اغلبكم شافه بقسم الاكل الاسيوي شكله هيك وفي منه لون ابيض وهو مش غالي كتير والعلبة بتبرك


بالمناسبة الصورة لحبوب التابيوكا قديمة (يعني اذا انتبهتوا على تاريخ الانتهاء) بس ما عندي ضل حاليا فمضطرة استخدمها لتوضيح ما هي حبوب التابيوكا
امي وابوي حبوها كتير ولقوها تغيير عن المعتاد... جربوها

مهلبية الفانيلا بالتابيوكا والفراولة

المقادير:
2 كوب ماء
1/3 كوب حبوب تابيوكا
1/2 كوب حليب
1/2 كوب كريما...انا استعملت كله كريما ههههه بحب الطعم الغني
2 ملعقة صغيرة فانيلا
1/2 كوب سكر
10 حبات فراولة مقطعة
2 ملعقة طعام سكر
للتزيين:
فراولة مقطعة 
لوز محمص

الطريقة:
تخلط الفراولة مع 2 ملعثة من السكر وتترك 10 دقائق وتوزع على الكاسات
في قدر على النار نغلي الماء صم نضيف حبوب التابيوكا ونقلب ونخفض الحرارة ونحرك بشكل متقطع لتنضج التابيوكا وتصبح اكثر شفافية في اللون (حوالي 10 دقائق)
نضيف باقي المواد ما عدا الفانيلا ونطبخها مع التحريك 3 دقائق
نرفعها ونضيف الفانيلا ونسكبها في صحن عميق ونغطي الوجة لمنع تكون قشرة ونتركها لتبرد تماما
نوزعها على الكاسات وتبرد 4 ساعات بالثلاجة
تزين بالفراولة واللوز المحمص
